Ingredients

- 1 lb beef stew meat, cubed
- 1 cup pearl barley
- 4 cups beef broth
- 2 cups water
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Brown the beef in a large pot over medium heat.
- Add onions, carrots, celery, and garlic. Cook until softened.
- Pour in beef broth and water, then add barley, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until barley is tender.
- Season with salt and pepper.
- Remove bay leaf before serving.

- Barley absorbs liquid as it sits—add more broth if needed.
