Description
A comforting and easy one-pot lasagna soup with all the flavors of traditional lasagna.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1 (28 oz) can crushed tomatoes
- 6 cups chicken broth
- 8 lasagna noodles, broken into pieces
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add onion, garlic, basil, oregano, and red pepper flakes. Cook until onion softens.
- Stir in crushed tomatoes and chicken broth.
- Bring to a boil, then add broken lasagna noodles.
- Simmer for 15-20 minutes until noodles are tender.
- Stir in heavy cream and half the cheeses.
- Season with salt and pepper.
- Serve topped with remaining cheese.
Notes
- Use Italian sausage for a richer flavor.
- Add spinach or mushrooms for extra vegetables.
- Leftovers keep well for 3 days in the fridge.
