Description

A comforting and easy one-pot lasagna soup with all the flavors of traditional lasagna.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1 (28 oz) can crushed tomatoes
  • 6 cups chicken broth
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add onion, garlic, basil, oregano, and red pepper flakes. Cook until onion softens.
  3. Stir in crushed tomatoes and chicken broth.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Simmer for 15-20 minutes until noodles are tender.
  6. Stir in heavy cream and half the cheeses.
  7. Season with salt and pepper.
  8. Serve topped with remaining cheese.
