Ingredients

  • 1 whole turkey (1214 lbs)
  • 1/2 cup unsalted butter, softened
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 lemon, halved
  • 1 onion, quartered
  • 4 cloves garlic, peeled
  • 2 cups chicken or turkey stock

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Remove giblets and neck from turkey. Pat dry with paper towels.
  3. Mix butter, salt, pepper, garlic powder, onion powder, thyme, and rosemary in a bowl.
  4. Rub the butter mixture under the skin and all over the turkey.
  5. Place lemon, onion, and garlic inside the cavity.
  6. Place turkey on a rack in a roasting pan. Pour stock into the pan.
  7. Roast for 3-3.5 hours, basting every 30 minutes, until internal temperature reaches 165°F (74°C).
  8. Let rest for 20 minutes before carving.

Notes

  • Use a meat thermometer to check doneness.
  • For crispier skin, increase oven temperature to 425°F (220°C) for the last 10 minutes.
