A delicious chicken pesto sandwich made with tender chicken, fresh pesto, and your choice of bread.
Ingredients

- 2 boneless chicken breasts
- 1/2 cup pesto
- 4 slices of bread (ciabatta or sourdough recommended)
- 1/4 cup mayonnaise
- 1/2 cup arugula
- 1/4 cup sliced tomatoes
- 1/4 cup shredded mozzarella cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a pan over medium heat and cook chicken for 6-7 minutes per side until fully cooked.
- Slice the cooked chicken into thin strips.
- Toast the bread lightly if desired.
- Spread mayonnaise on one side of each bread slice.
- Layer arugula, sliced chicken, tomatoes, and mozzarella cheese on one slice.
- Spread pesto on the other slice and press together to form a sandwich.
- Cut in half and serve immediately.

- Use homemade or store-bought pesto.
- Grill the sandwich for a warm, crispy texture.
