- 6 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter
Instructions
- Place potatoes, onion, garlic, broth, salt, pepper, and thyme in the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Use a potato masher to slightly thicken the soup.
- Stir in heavy cream, butter, and cheddar cheese until melted.
- Serve warm with optional toppings like green onions or bacon bits.
Notes
- For a thicker soup, mash more potatoes.
- Substitute milk if you don’t have heavy cream.
- Add cooked bacon for extra flavor.
