- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup corn kernels
- 1/4 cup mayonnaise
- 1 tbsp lime juice
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 avocado, sliced
Instructions
- Preheat grill or skillet to medium-high heat.
- Mix chili powder, smoked paprika, garlic powder, salt, and black pepper in a small bowl.
- Coat chicken with olive oil and rub with the spice mixture.
- Grill chicken for 6-7 minutes per side until fully cooked.
- In a bowl, mix corn, mayonnaise, lime juice, and cotija cheese.
- Slice chicken and assemble bowls with corn mixture, chicken, avocado, and cilantro.

- Use grilled corn for extra flavor.
- Replace cotija with feta if unavailable.
