Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 6 corn tortillas, cut into strips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken, black beans, corn, salsa, sour cream, chili powder, cumin, and garlic powder.
  3. Layer half the tortilla strips in a greased baking dish.
  4. Spread half the chicken mixture over the tortillas.
  5. Sprinkle half the cheddar and Monterey Jack cheese on top.
  6. Repeat layers with remaining tortillas, chicken mixture, and cheese.
  7. Bake for 25 minutes or until bubbly and golden.
  8. Let cool for 5 minutes before serving.
