- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 6 corn tortillas, cut into strips
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix shredded chicken, black beans, corn, salsa, sour cream, chili powder, cumin, and garlic powder.
- Layer half the tortilla strips in a greased baking dish.
- Spread half the chicken mixture over the tortillas.
- Sprinkle half the cheddar and Monterey Jack cheese on top.
- Repeat layers with remaining tortillas, chicken mixture, and cheese.
- Bake for 25 minutes or until bubbly and golden.
- Let cool for 5 minutes before serving.
