  • 1 teaspoon salt
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 cloves garlic, minced

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat. Add onions, sugar, and salt. Cook until caramelized, about 20 minutes.
  3. Push onions to the side and add chicken. Cook until browned, about 5 minutes.
  4. Add garlic and thyme. Stir for 1 minute.
  5. Add orzo and chicken broth. Bring to a simmer.
  6. Transfer mixture to a baking dish. Stir in Gruyère, Parmesan, and cream.
  7. Bake for 20 minutes or until bubbly.
  8. Garnish with parsley before serving.
