- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 pound boneless, skinless chicken breasts, cubed
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet over medium heat. Add onions, sugar, and salt. Cook until caramelized, about 20 minutes.
- Push onions to the side and add chicken. Cook until browned, about 5 minutes.
- Add garlic and thyme. Stir for 1 minute.
- Add orzo and chicken broth. Bring to a simmer.
- Transfer mixture to a baking dish. Stir in Gruyère, Parmesan, and cream.
- Bake for 20 minutes or until bubbly.
- Garnish with parsley before serving.
Notes
- Use a mandoline for even onion slices.
- Substitute mozzarella if Gruyère is unavailable.
- Let casserole rest for 5 minutes before serving.
