Ingredients

  • 2 tbsp olive oil

  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Sauté onions, garlic, carrots, and celery until softened.
  4. Add red wine, beef broth, tomato paste, thyme, and bay leaf.
  5. Return the beef to the pot and bring to a simmer.
  6. Cover and cook on low heat for 2 hours until the beef is tender.
  7. Season with salt and pepper before serving.
