- 2 lbs beef chuck, cut into cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 2 cups red wine
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove from the pot.
- Sauté onions, garlic, carrots, and celery until softened.
- Add red wine, beef broth, tomato paste, thyme, and bay leaf.
- Return the beef to the pot and bring to a simmer.
- Cover and cook on low heat for 2 hours until the beef is tender.
- Season with salt and pepper before serving.
Notes
- Use a dry red wine like Cabernet Sauvignon or Merlot.
- For extra flavor, marinate the beef in wine overnight.
- Serve with crusty bread or mashed potatoes.
