Ingredients

- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup Greek yogurt
- 1 tbsp chopped fresh dill
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken and coat well. Marinate for 30 minutes.
- Cook chicken on a grill or skillet for 6-8 minutes per side.
- Let it rest, then slice.
- Assemble bowls with quinoa, chicken, tomatoes, cucumber, and onion.
- Mix yogurt and dill, then drizzle over bowls.
