Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Greek yogurt
  • 1 tbsp chopped fresh dill

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken and coat well. Marinate for 30 minutes.
  3. Cook chicken on a grill or skillet for 6-8 minutes per side.
  4. Let it rest, then slice.
  5. Assemble bowls with quinoa, chicken, tomatoes, cucumber, and onion.
  6. Mix yogurt and dill, then drizzle over bowls.
