- 1 cup diced onion
- 2 cloves garlic, minced
- 1 cup small pasta (like ditalini or orzo)
- 1 cup shredded cooked chicken (optional)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook until softened (about 5 minutes).
- Stir in garlic and cook for 1 minute.
- Pour in broth and bring to a boil.
- Add pasta and cook until al dente (about 8-10 minutes).
- Stir in shredded chicken (if using) and herbs. Simmer for 2-3 minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
