  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup small pasta (like ditalini or orzo)
  • 1 cup shredded cooked chicken (optional)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Cook until softened (about 5 minutes).
  3. Stir in garlic and cook for 1 minute.
  4. Pour in broth and bring to a boil.
  5. Add pasta and cook until al dente (about 8-10 minutes).
  6. Stir in shredded chicken (if using) and herbs. Simmer for 2-3 minutes.
  7. Season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.
