- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tbsp taco seasoning
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 6 corn tortillas, cut into quarters
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, black beans, tomatoes, corn, sour cream, taco seasoning, garlic powder, and salt.
- Layer half the tortillas in a greased baking dish.
- Spread half the chicken mixture over the tortillas.
- Sprinkle half the cheese on top.
- Repeat layers with remaining tortillas, chicken mixture, and cheese.
- Bake uncovered for 25 minutes or until bubbly and golden.
- Let stand 5 minutes before serving.
Notes
- Use rotisserie chicken for a quicker option.
- Substitute flour tortillas if preferred.
- Top with avocado or cilantro before serving.
