- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5 minutes.
- Stir in onion, garlic, thyme, and rosemary. Cook for 2 minutes.
- Pour in chicken broth and bring to a simmer. Cook for 15 minutes.
- Reduce heat to low and stir in heavy cream and Parmesan cheese.
- Season with salt and pepper. Simmer for 5 more minutes.
- Serve hot.

- Use fresh herbs for a stronger flavor.
- Adjust creaminess by adding more or less heavy cream.
