A simple and healthy sheet pan meal featuring Mediterranean flavors with chicken and zucchini.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, zucchini, bell peppers, and onion with olive oil, oregano, garlic powder, paprika, salt, and black pepper.
  3. Spread evenly on a sheet pan.
  4. Bake for 20-25 minutes or until chicken is cooked through.
  5. Sprinkle with feta cheese and parsley before serving.
