Ingredients

- 2 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken, zucchini, bell peppers, and onion with olive oil, oregano, garlic powder, paprika, salt, and black pepper.
- Spread evenly on a sheet pan.
- Bake for 20-25 minutes or until chicken is cooked through.
- Sprinkle with feta cheese and parsley before serving.

- Cut vegetables evenly for even cooking.
- Use a meat thermometer to check chicken reaches 165°F (74°C).
- Store leftovers in an airtight container for up to 3 days.
