Description

A hearty slow cooker soup with tender chicken, wild rice, and vegetables.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup wild rice, uncooked
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add wild rice, onion, carrots, celery, and garlic.
  3. Pour chicken broth over ingredients.
  4. Season with thyme, rosemary, black pepper, and bay leaf.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Remove chicken, shred, and return to the slow cooker.
  7. Discard bay leaf and serve hot.

Notes

  • For thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes.
  • Leftovers can be stored in the fridge for up to 3 days.
