Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 tsp black pepper
  • 2 green onions, sliced

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic and ginger, cook for 1 minute.
  4. Add pineapple, soy sauce, honey, and black pepper. Mix well.
  5. Cook for 5 minutes until sauce thickens.
  6. Serve over rice and garnish with green onions.
