A simple and healthy carrot soup that’s easy to make with fresh ingredients.
Ingredients

- 4 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp ground ginger
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic, sauté until soft.
- Add carrots, ginger, salt, and pepper. Stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until carrots are tender.
- Blend the soup until smooth.
- Adjust seasoning if needed and serve hot.
Notes
- You can add a splash of coconut milk for creaminess.
- Store leftovers in an airtight container for up to 3 days.
