A rich and creamy soup with tender chicken and the classic flavors of chicken parmesan, made easy in your crock pot.
Ingredients

- 2 lbs boneless, skinless chicken breasts
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded parmesan cheese
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Place chicken breasts in the crock pot.
- Add crushed tomatoes, diced tomatoes, chicken broth, onion, garlic, basil, oregano, salt, black pepper, and red pepper flakes.
- Cook on low for 6 hours or high for 3 hours.
- Remove chicken and shred it, then return to the pot.
- Stir in heavy cream and parmesan cheese.
- Cook for another 15 minutes to thicken.
- Serve topped with mozzarella cheese and fresh basil.
Notes
- For extra flavor, brown the chicken slightly before adding to the crock pot.
- Substitute half-and-half for heavy cream for a lighter version.
- Store leftovers in the fridge for up to 3 days.
