A rich and creamy soup with tender chicken and the classic flavors of chicken parmesan, made easy in your crock pot.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Place chicken breasts in the crock pot.
  2. Add crushed tomatoes, diced tomatoes, chicken broth, onion, garlic, basil, oregano, salt, black pepper, and red pepper flakes.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Remove chicken and shred it, then return to the pot.
  5. Stir in heavy cream and parmesan cheese.
  6. Cook for another 15 minutes to thicken.
  7. Serve topped with mozzarella cheese and fresh basil.

Notes

  • For extra flavor, brown the chicken slightly before adding to the crock pot.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Store leftovers in the fridge for up to 3 days.
