Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 lb green beans, trimmed
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken thighs with salt and black pepper.
  3. Sear chicken for 5-6 minutes per side until golden brown. Remove from skillet.
  4. Add green beans to the same skillet and cook for 3-4 minutes.
  5. Push green beans to the side and melt butter in the skillet.
  6. Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  7. Return chicken to the skillet and pour lemon juice over everything.
  8. Cook for 2-3 more minutes until chicken is fully cooked.
  9. Sprinkle lemon zest before serving.

Notes

  • Use a meat thermometer to check chicken reaches 165°F.
  • Adjust red pepper flakes to control spiciness.
  • Serve with crusty bread to soak up the sauce.
