Description

A delicious and easy-to-make pesto pasta dish with crispy parmesan-crusted chicken.


Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 2 boneless, skinless chicken breasts
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1/2 cup basil pesto
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Pound chicken breasts to even thickness. Season with salt and pepper.
  3. Dip chicken in beaten egg, then coat with a mix of parmesan and breadcrumbs.
  4. Heat olive oil in a pan over medium heat. Cook chicken for 5-6 minutes per side until golden and cooked through.
  5. Toss cooked pasta with pesto. Slice chicken and serve on top.
