- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 can (10 oz) enchilada sauce
- 6–8 flour tortillas
- 1/2 cup diced onions
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix shredded chicken, 1/2 cup cheese, sour cream, onions, chili powder, cumin, garlic powder, salt, and pepper.
- Spoon the mixture into tortillas, roll them up, and place seam-side down in a baking dish.
- Pour enchilada sauce over the top and sprinkle with remaining cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve hot with extra sour cream if desired.
